Cauliflower and Leek Chowder

Cauliflower and leek chowder topped with crispy turkey bacon – this stuff is seeeeriously good for you, packed with vitamin c for these cold winter days and oh-so yummy!

Ingredients:

1 onion, diced
2 tbsn coconut oil
2 cloves garlic
1 leek, chopped
1 cauliflower,chopped
Salt and pepper to taste
1/2 tspn paprika
1 tspn fresh turmeric
1/2 tspn coriander seeds
1 tspn dill
2 cups chicken stock / veg stock
1 can coconut cream
Turkey bacon, grilled, chopped

Method:

Fry the onions in the coconut oil
Throw in the leeks and garlic
Add spices
Sauté for 2 mins
Add cauliflower
Cook for about 10 mins
Add chicken stock
Cook and simmer for about 15 mins
Add coconut cream – heat through but do not boil
*I blitz it in the nutribullet but you don’t have to if you like it chunky like a monkey*🐒
Sprinkle with turkey bacon and EN-JOY
