When there are no fresh vegetables in the house and you can’t be bothered with the frozen ones you turn your gaze over to the humble nut. Walnut linguine for dinner tonight – a bit spicy, but so yummy!
Ingredients:
1 onion
A generous handful of walnuts, chopped
Salt and pepper to taste
1/2 teaspoon chilli flakes (be warned, it’ll be hot)
1/2 teaspoon minced garlic
1 teaspoon mixed herbs
2 tablespoons tomato paste
Method:
In a wok, sauté the onions, add the walnuts, and fry for about 5 mins.
Then add the garlic and all of the spices
Finally add the tomato paste and fry for a further 5 minutes
Prepare the linguine, drain and add it to the wok and toss around in the spicy walnut mix
Serve with sour cream (believe me, you’ll need it) and enjoy
