Caramel Chew Chew Bars

Yaaaas! I made my own chocolate bars! Sooo excited about these caramel chew chew bars that look just like an ordinary bar of chocolate, only they’ve been made with 100% natural ingredients. To be honest I was so random with this recipe, it was a bit of ‘mix, mix, and mix some more until you get it right’, but the final result is just spectacular, there are 4 layers to this recipe, so follow carefully….

Coconut Shortbread Layer:

1 cup coconut flour
2 tablespoons coconut oil
1/4 cup honey
Mix everything really well and then press into a lightly greased square loose base cake tin (mine was about 8 inches)
Put it into the chiller drawer of your fridge for about an hour to firm up

Cashew and date layer:

1 cup cashews
1/2 cup dates
1/2 teaspoon cinnamon
1 teaspoon honey
1 tablespoon coconut oil
Blitz the cashews until finely ground
Add the dates, honey, oil, and cinnamon and pulse until smooth
Take out your cake tin and cover with the cashew and date layer
Put back in the chiller drawer and leave for another hour to firm up

Caramel chew chew layer:

1/2 cup dates
2 tablespoons nut butter (I used peanut because I like the contrast with cashew)
1 teaspoon honey
1 tablespoon coconut oil
2 tablespoons soya cream
2 tablespoons coconut milk
1/2 teaspoon fleur de sel / sea salt
Blitz all ingredients together until well combined and as smooth as you can get it. I just kept adding cream / milk until I felt I liked the consistency.
Remove tin from fridge and spread with the date and nut butter mix
Allow to chill in the chiller drawer for another 1 hour, then remove from the fridge, slice up and then make the chocolate covering .
Chocolate covering:
Plain chocolate solids
1 teaspoon honey
1 teaspoon coconut oil
Melt over a Bain Marie
Dip each bar into the chocolate, make sure it’s all covered.
Place on a baking rack
Allow to chill in the fridge for at least 20 minutes before serving and enjoy!

I found the bars I made were pretty big so I cut them in half when I stored them. They’re so pretty – I’ve told myself they’re basically superfood in candy form
