Clean Chocolate Brownies

So I thought I’d share the baking love and took some brownies into work today; they seemed to go down well! My colleague called them “clean brownies”, but I made these when I was having major Monday blues yesterday with that “don’t give two hoots” kinda feeling to spur me on! They were light yet dense and packed with feel-good ingredients – they certainly did a great job to put some ‘happy’ into me! By the way I added protein powder to these but you can totally make them without – happy baking!

Makes 16 brownies

Ingredients:

1 cup almonds (ground)
1/2 cup cashews (ground)
A handful of walnuts
A handful of cranberries
A handful of white chocolate chips
100g coconut oil
2 eggs
50g coconut sugar
50g honey/maple/agave/mix a few up
2 tablespoons of raw cacao
1 teaspoon baking powder
A sprinkle of fleur de sel
2 tablespoons protein powder

Method:

– Mix the oil and sugars until creamy
– Whisk in 2 eggs
– Add the ground almond and cashew, cacao, baking powder, and protein powder (if using it)
– Add the walnuts, cranberries, chocolate chips and fleur de sel
– Pour into the pre-greased 10 inch baking tin for 25 mins in a square 10 inch pan
– Slice when cool and store in a airtight container (but a word of caution, this batch lasted all of 24 hours
