Get Well Soon Chicken Soup

Sorry it’s taken me so long to post this! The child I made it for was having none of my delicious ‘Get Well Soon Soup’ so it’s taken him a while to recover (which is why it’s taken ages to put this recipe up to be honest!!) The other, ‘obedient one’, as I like to call her, did have it. And I’m pleased to say, she’s almost back to her normal, perky self 🤗

Ingredients:

1 onion, cubed
2 leeks, diced
4 carrots, diced
3 peppercorns
1 cinnamon stick
1 bay leaf
1 star anise
2 cloves
3 cloves garlic
1 tablespoon fresh ginger
1/2 teaspoon turmeric
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1kg boned chicken (whole, niblets, neck, leg, whatever you can get your hands on)
Salt and pepper to taste

Method:

Fry the onions, leeks, carrots in a little oil until soft
Add the whole spices and fry for a further 2 minutes
Add the garlic, ginger, salt and pepper
Add the chicken and fry for 5 minutes until the chicken has browned
Add 2 pints freshly boiled water
Bring to the boil, then cover and simmer for at least 2 hours
Strain and remove chicken from the bone (set aside – this can be used for something else)
Enjoy your soup with some quick noodles and get well soon!!
