So In case you hadn’t guessed it I was sick over the weekend (who am I kidding, I still am!!), which means I made more chicken soup – and that means chicken leftovers! I love these, using boiled, shredded chicken from the soup, mixed with mashed potatoes. Simply gorgeous! Recipe below…
Ingredients
2 cups cooked chicken, shredded
3 cups mashed potatoes (about half a kg of potatoes, boiled and mashed)
Salt and pepper to taste
1 tablespoon chives
1 teaspoon chilli flakes
1 teaspoon ground cumin
A handful of fresh coriander
For the coating:
1 egg
2 and a half cups breadcrumbs / panko
Method:
– Mix all ingredients together and make into balls and flatten into rounds
– Dip into the egg mix
– Dip into the breadcrumbs
– Fry in a little oil on a medium heat for about 1 minute on each side
– Enjoy with salad and a little sweet chilli sauce, or pop into a burger! YUM.
